BANANA MARSHMALLOW

INGREDIENTS

  • 2 bananas
  • 3.5 ounces dark chocolate
  • 1/3 cup coconut, shredded

INSTRUCTIONS

  1. Preheat oven to 450°F (230°C).
  2. Cut a line lengthways in the bananas, opening the skin up, but not cutting all the way through to the other side of the flesh.
  3. Wrap bananas in foil, place on a lined baking sheet and roast for 20 minutes.
  4. Melt the chocolate in the microwave or over a double boiler. Drizzle melted chocolate over bananas. Top with coconut and enjoy.

BANANA PANCAKES

INGREDIENTS

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup yogurt
  • 1 tablespoon honey
  • 2 bananas, mashed
  • 1 tablespoon butter

INSTRUCTIONS

  1. Combine flour, baking powder and salt in one bowl. In another bowl, whisk the eggs with milk, yogurt and honey.
  2. Pour the wet mix into the dry mix and fold in the mashed bananas.
  3. Heat a small frying pan over medium-high heat and melt half the butter. Pour in the batter and cook for 2 minutes, or until golden around the edges. Flip and cook for a further minute on the other side. Repeat with remaining batter.
  4. Serve with your favorite pancake toppings.

BANANA YOGURT

INGREDIENTS

  • 1 cup almond milk
  • 2 tablespoons chia seeds
  • 2 bananas, mashed

INSTRUCTIONS

  1. In a bowl, combine all ingredients and set in the fridge overnight.
  2. Serve with your favorite toppings or enjoy on its own.
