BANANA MARSHMALLOW
INGREDIENTS
- 2 bananas
- 3.5 ounces dark chocolate
- 1/3 cup coconut, shredded
INSTRUCTIONS
- Preheat oven to 450°F (230°C).
- Cut a line lengthways in the bananas, opening the skin up, but not cutting all the way through to the other side of the flesh.
- Wrap bananas in foil, place on a lined baking sheet and roast for 20 minutes.
- Melt the chocolate in the microwave or over a double boiler. Drizzle melted chocolate over bananas. Top with coconut and enjoy.
BANANA PANCAKES
INGREDIENTS
- 1 1/2 cups flour
- 1 teaspoon baking powder
- Pinch of salt
- 2 eggs
- 1 cup milk
- 1/2 cup yogurt
- 1 tablespoon honey
- 2 bananas, mashed
- 1 tablespoon butter
INSTRUCTIONS
- Combine flour, baking powder and salt in one bowl. In another bowl, whisk the eggs with milk, yogurt and honey.
- Pour the wet mix into the dry mix and fold in the mashed bananas.
- Heat a small frying pan over medium-high heat and melt half the butter. Pour in the batter and cook for 2 minutes, or until golden around the edges. Flip and cook for a further minute on the other side. Repeat with remaining batter.
- Serve with your favorite pancake toppings.
BANANA YOGURT
INGREDIENTS
- 1 cup almond milk
- 2 tablespoons chia seeds
- 2 bananas, mashed
INSTRUCTIONS
- In a bowl, combine all ingredients and set in the fridge overnight.
- Serve with your favorite toppings or enjoy on its own.
