S’mores Cookie Sandwiches

INSTRUCTIONS
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream together peanut butter and coconut sugar for 1 minute. Add the vanilla extract and mix for another 30 seconds. Add oat flour and baking soda and continue to mix until crumbly. Add almond milk, a little at a time, until mixture comes together. Do not over-mix.
- Roll dough into tablespoon-sized balls and flatten between hands. Place cookies on a parchment paper-lined cookie sheet, and bake for 9 to 11 minutes.
- While cookies are cooling slightly, torch marshmallows over a flame on the stove.
- Sandwich a toasted marshmallow (or 2) and a square of chocolate between 2 cookies. Enjoy!
